A marriage of whiskies from two Spanish ex-Pedro Ximenez Sherry barrels and a Portuguese ex-Tawny Port barrel.
The barrels this whisky was aged in come from across the Iberian Peninsula. Iberia Double Wood is a unique blend of whisky that draws inspiration from the traditional fortified wine expressions of both Iberian cultures.
This marriage of barrels brings together the delightful notes of dried fruits and vanilla from American oak and PX Sherry, alongside the indulgent richness of dark fruits and toffee found in French oak and Port. All three barrels re-coopered, toasted and charred in Portugal.
Brandy soaked dark spiced fruitcake, toffee and coffee notes on the nose. Toffee, coffee, rich dark fruitcake and sweet berries on the palate with a long finish of fruity Christmas pudding fading to lingering red berries and vanilla Chantilly cream.
Bottled annually, from a single cask, at cask strength, this is the world’s only Sloe Gin Barrel finished Single Malt Whisky.
This whisky was initially aged in small, virgin French and Bulgarian oak barrels for over five years before spending the last 12 months in a barrel previously used for making our award-winning Pinot Barrel Sloe Gin liqueur.
The nose exhibits notes of icing sugar, vanilla, raspberries, marzipan and stewed plums over toffee and malt. The palate is rich and mouth-filling with plum, toffee and malt. The finish is long and reminiscent of dark cocoa and red berries.
There are only around 450 bottles in this release.

Virgin French Oak (46%) - New Zealand Single Malt Whisky aged four and a half years in small, 50 and 100 litre, virgin French oak barrels. Toffee and milk chocolate, oak/wood and soft floral undertones on the nose. Oily, oak, dark caramel, dark cocoa, new leather, creamy tannin, floral and anise on the palate. Long, bright and fruity finish.
Port Wood (46%) - Single Malt Whisky aged four years in genuine Portuguese ex Tawny Port barrels, re-coopered to 50 and 100 litre sizes, shaved, toasted and re-charred in Portugal.
Sloe Gin Barrel Finish (63.5%) - Single Malt Whisky aged over five years in small Virgin French and Bulgarian Oak barrels, then 12 months in our award-winning Pinot Barrel Sloe Gin barrels.
Divergence Whisky is a craft product. We are hands on, every step of the way, including the bottling process. Each bottle of Divergence is artfully hand dipped in hot wax to provide a final layer over each corkseal.
Wax is an organic substance. It softens in the heat and contracts in the cold or air conditioning. Your wax top may be cracked or scuffed or slightly imperfect. This is perfectly normal. It does not effect the cork sealing of the whisky in any way. It is, in fact, the mark of a truly hand crafted product.
