Today the Spirits Workshop operates within the small batch distillery of Workshops Whiskey owned by the Father and Son team of Anthony and Doug Lawry. Doug and Anthony recognised the same advantages of Canterbury and developed the same passion for the manufacture of a New Zealand Single Malt Whisky a few years earlier and already operated a small craft distillery with copper pot stills built in-house and by hand from their own designs. Our partnership has allowed both parties to develop a stock of premium spirit in barrels and that stock is growing into a significant investment in the future of New Zealand Single Malt Whisky.
Each spirit batch starts from whole malted grain and is milled, mashed, fermented and distilled in small batches on our bespoke distillery equipment designed and built in-house.
Each batch from the mash tun to the spirit still, delivers the equivalent of one 200-litre cask of barrel strength spirit (~63% ABV). This “new make spirit” is then barreled in virgin French Oak casks of various sizes and racked for ageing on site. It will be in these casks for a minimum of three years before it can be truly called Whisky.
Despite the small batch size, the stock of ageing Whisky being built by both Workshops Distillery and The Spirits Workshop is growing quickly. Ageing for at least three years allows our Whisky to develop the rounded rich flavour of a true premium Single Malt, before being bottled for sale. As many barrels as resources allow are added to the ageing inventory each month.
